Every July 25 in Guayaquil the festivities of Santiago del Mayor are celebrated. This festivity commemorates the founding of the city. The patron saint festivities of Guayaquil coincide with the Gastronomic Fair of Roots.

Some traditions and customs are:

• The serenades
• Rodeos
• etc.

Traditional food is varied but the most outstanding dishes are: ceviche and encocado.

The music heard at these parties are the parades and the corridors mostly by Julio Jaramillo.
